Sakura Kappo Tasting Menus – Spring 2026

April and May mark one of the most cherished seasons in Japanese culture, and this year, Roketsu’s Japanese tasting menu brings the full spirit of spring to the table.

From 1 April 2026, we are pleased to introduce two new seasonal tasting menus — Classic Sakura Kappo Tasting Menu and Prime Sakura Kappo Tasting Menu — available for dinner service through May.

Sakura, beyond the visual

In Japan, cherry blossom is not only something you see — it is something you taste. Salt-pickled sakura leaves lend a delicate floral character to dishes, while sakura-cured fish carries a gentle, almost ephemeral fragrance. This season, cherry blossom is woven into the menu as a flavour in its own right.

Spring’s finest ingredients

Both menus draw on the produce that defines Japanese spring: bamboo shoots at their most tender, sea bream giving way to the sweetness of the new season, and wild mountain vegetables adding depth and contrast. The Classic menu features our signature Sakura Tempura — wild mountain vegetables lightly battered and wrapped in a salt-pickled cherry blossom leaf — while the Prime menu elevates the season further with premium selections including toro, scallop with caviar, and A5 wagyu.

Rooted in tradition

The season’s soup course is inspired by hamaguri ushiojiru — a clear clam soup traditionally served on Hinamatsuri, the Japanese Doll Festival celebrated each year on 3 March. One of Japan’s most beloved spring traditions, Hinamatsuri marks the arrival of the season and is associated with wishes for happiness and good health. The cherry stone clam, prized for its perfectly matched shells, is a symbol of harmony — and its delicate sweetness makes it one of spring’s most refined ingredients. Steamed clam and tender bamboo shoot are served in a clear, delicate dashi broth: simple, seasonal, and deeply considered.

Whether you choose Classic or Prime, both menus are an invitation to experience spring the way Japan does — with attention, intention, and ingredients at their fleeting best.
