Friday 24 April 2026, 19:00 — Roketsu is pleased to announce a one-night Four Hands Dinner, bringing together two Japanese chefs who have each spent years defining London’s Japanese dining scene.
On the evening of 24 April, Chef Toshimasa Tanahashi and Chef Hideki Hiwatashi will stand together in Roketsu’s kitchen to create a single course menu — conceived for this evening alone.
Chef Toshimasa Tanahashi
Chef Tanahashi has spent more than 30 years at the forefront of Japanese cuisine across Japan and London. From the discipline of the sushi counter and the tempura station to leading the kitchens of respected Japanese restaurants in this city, each environment has contributed to the culinary foundation of Roketsu. His cooking reflects a deep respect for classical technique and an unwavering attentiveness to ingredient — qualities refined through decades of repetition and quiet, craftsman-like enquiry.
Chef Hideki Hiwatashi
Chef Hiwatashi’s journey began with the bold, elemental flavours of Hokkaido, before leading him to the refined precision of Kyoto kaiseki. He established himself as head chef of the two-Michelin-starred Kikunoi Roan in Kyoto, then spent 14 years as Executive Chef of Sake no Hana in Mayfair (Hakkasan Group) — playing a defining role in bringing London’s Japanese dining to international standing.
One evening. Two chefs. No repetition.
This is not a fusion of styles — it is a quiet placing of two distinct voices side by side. A dialogue between tradition, season, technique, and sensibility. A menu created solely for this evening, which will not be repeated.
